2 Year Aged Cheddar

- The oldest of our range, this fine, craft cheddar creates an explosion of flavor.
- The rather pronounced aroma of the two products creates the perfect mix. They share common flavors like nuts, bourbon, and an oak barrel aftertaste.
- Irish whiskey is the most well-suited because it has been aged in a sherry cask.

- What would a good cheddar be without good wine? Cabernet Sauvignon is the best pairing for this cheddar. It is a red wine with dark fruit flavors like black cherry and blackberry.
- If the wine has a taste of red fruits, serve it with blackberries or blueberries.
- Tip: Don’t put the wine in the fridge, it is recommended to serve it at room temperature. If the wine is too cold, it will alter its natural aroma.

White Vermont Cheddar
with Fruit and Muscadet White Wine
- Sweet fruits with white cheddar that is creamy and mild, like Vermont, make a super tasty combination!
- Apples, grapes, pears, and red berries all pair wonderfully with White Vermont Cheddar. Slightly acidic fruits can also be a good pairing because their sharpness will counterbalance the buttery side of the cheddar.
- Tip: If you want your fruit board to be beautiful, do not cut the fruit too early before serving. Some fruits may turn brown due to oxidation.

- With a tangier and more complex taste, this extra sharp has a refined flavor.
- Always start by placing the cheese on a large wooden board. Then add in some charcuterie, arranged in a crumpled way to give more volume to the platter.
- A cheese platter would be nothing without jams and fruits. We suggest sliced apples, pears, pomegranate, etc.
- Extra sharp cheddar is also great on crackers, on which you can add dried cranberries for a sweet touch.

- The older the cheddar is, the better it pairs with a strong beer.
- White Vermont cheddar that is less than one year old compliments a Pilsner or Lager, which are soft and light.
- Flavored cheddar, like Chipotle Pepper and Pepper Jack, pair well with beers that tend to be brown, like an ale.
- Mature and sharp cheddars, like our 2 Years Aged Cheddar and Smoky Hickory Cheddar, go with IPAs or Trappist beer that have a slightly bitter finish.
